I received these boxes of delicious muesli recently from Dorset Cereals* and thought I'd get creative. I wanted to see if I could make them into some kind of healthier treat/elevenses snack. I have such a sweet tooth and am always reaching for chocolate or cake. Recently I have switched it up to a bowl of cereal or granola as it still satisfies my sweet tooth but fills me up a bit more.
My first idea were these breakfast bites as I thought they are great as an on the go snack/breakfast to grab and eat as they are or I can crumble one up with fruit & milk as a little snack. They turned out really well, they are so yummy and I tried to make them as healthy as I possibly could!
Breakfast Bites;
100g Dorset Cereals fruit granola,
125g Dorset Cereals spelt fruit & nut muesli,
100g porridge oats,
5 dried apricots, chopped,
75g light margarine/coconut oil,
75g fruit sugar,
splash or so of milk,
1 egg, beaten.
Method:
1. Preheat oven to 180 degrees and put your cake cases into a cake/muffin tin.
2. Slowly melt the butter/coconut oil in a pan, when melted, stir in the sugar until it has dissolved.
3. Remove from the heat and stir in all the remaining ingredients.
4. Spoon into your cake cases and pop them in the oven for 10-15 mins or until golden brown & crunchy on top.
Next up, I decided to try out some cookies. I do love my biscuits and these are SO yummy, still sweet enough but not laden with sugar or chocolate. Sienna is a fan of these too, I did it in a video format to switch things up a bit, enjoy!
