Top 3 Quick, Easy & Healthy Meal Ideas!*

I must admit I am not a culinary goddess so quick and easy is my kitchen moto. I tend to use our microwave a lot because of the ease and quickness. I use it for vegetables, rice, sweet potatoes and anything else that will cook well in it! Although I love to eat clean and healthy, I won't settle for bland and boring. Lately, I've been stuck in a rut with meal ideas and lost all inspiration. I've been turning to food blogs for some new recipes and I thought I'd share some of my quick and easy meal ideas incase you are stuck too!


1. Sausage Pasta.

Pasta is known for being quick and filling so this is a always a winner. Of course, I use whole wheat to make it healthier, low fat/lean sausages and I always add in some broccoli for extra green and goodness. A sprinkling of cheese is a must ;)


2. Pork stir fried quinoa. 

This is basically my version of a stir fry but I use quinoa instead of noodles. Sometime we use rice (the microwavable wholegrain packets of course!). I cook the pork, add in my cooked veg and then the quinoa. Instead of a stir fry sauce we just use garlic, ginger & low salt soy sauce.


3. Prawn & Chorizo noodles.

This one is super duper quick and full of flavour! Just cook the chorizo in a pan then drain the oil, add some olive oil & garlic to infuse then add your prawns. Add some lemon juice to taste and voila! Serve over wholewheat noodles or with crusty bread and garnish.


So that's our top 3 that we have quite regularly, I hope it gives you some new ideas. 
This week I think I am going to try out this recipe shown below. I've never tried cooking salmon in the microwave even though we eat a lot of it!
