Wholewheat Honey Banana Bread!!

I'm a BIG fan of banana bread and always on the hunt for the best recipe. Well, i think i've finally found it! This one ticks all my boxes; wholemeal, low sugar using only honey and deliciously moist and yummy! It's also quick and easy to make, as are most of my recipes!

1/3 cup melted coconut oil,
1/2 cup honey,
2 eggs,
2 mashed very ripe bananas,
1 teaspoon vanilla extract/essence, (whatever you have)
1/2 teaspoon salt,
1/2 teaspoon cinnamon,
1 & 3/4 cups of wholemeal flour,
1 teaspoon baking powder,
1/4 cup hot water.

  • Preheat oven to 325 degrees F (165 degrees C) and grease a 9×5 inch loaf pan.
  • In a large bowl, beat oil and honey together.
  • Add eggs, and beat well.
  • Stir in bananas and vanilla, then stir in the salt and cinnamon. Lastly, stir in the flour, just until combined.
  • Add baking soda to hot water, stir to mix, and then add to batter.
  • Pour batter into the loaf pan.
  • Sprinkle with cinnamon, and swirl with a toothpick for a pretty marbled effect.
  • Bake for 55 to 60 minutes. Be sure to check that the bread is done baking by inserting a toothpick in the top. It should come out clean.
  • Wait 5 minutes, then cool on a wire rack for 1/2 hour before slicing.

  • Let me know if you bake this, it is seriously SO moist and delicious!
