Healthy, wholemeal blueberry muffins!


I found this recipe whilst flicking through a magazine at work, seeing they were 'healthy' and looked delicious, i instantly flew to the photo-copier to copy it! (My boss was on holiday, shh don't tell!) I had most of the ingredients on hand already so just got the few extras on Saturday! Sundays are usually my 'lazy' days as i tend not to go anywhere, i give my skin a break from make-up, stay in my pjs and bake :)




Recipe;
2 large, very ripe bananas,
300g wholemeal flour,
1 1/2 tsp baking powder,
1 tsp bicarb of soda,
pinch of fine sea salt,
75g fruit sugar or 100g brown sugar,
284ml buttermilk, (i used soya milk because i'm lactose intolerant),1 large egg,
40ml light olive oil, 35ml water, 

200g blueberries,
1 tbsp demerara sugar for topping.

Method;

Heat oven to 180 degrees, gas 4. Line a 12 hole muffin tin with muffin cases. Peel bananas and mash with a fork in a small bowl. In a large mixing bowl, mix the flour, baking powder, bicarb of soda, salt and brown sugar together. Make a well in the center and add the milk, egg, olive oil and bananas. Gently fold the ingredient together until just incorporated, don't over mix! Add the blueberries and gently fold in.

Spoon the batter into each muffin case and top with a sprinkle of demerara sugar. Bake for 20-25 minutes, until golden brown and risen well. Leave too cool on a wire rack and then enjoy!

I froze mine so they keep longer, then i can just take one out the night before work to pop in my bag as an easy, healthy & filling on the go snack or for a quick breakfast spread with peanut butter & a milky coffee!


Each muffin is around 195 cals, 6g fat with only 1g saturates!
